Pecan Pie Muffins
2 lg. eggs 1/2 c melted butter
1 c chopped pecans
1 c brown sugar
1/2 c flour
Stir together eggs and melted butter. Add next 3 ingredients,
stirring utnil well mixed. Pour batter into paper-lined muffin
cups, filling 2/3 full. Bake at 350* for 25 min.
If freezing: Once muffins are completely cool, put in
freezer bags, removing all excess air from bag. When ready to eat,
just thaw and warm in microwave.
(Batter is very runny so it might make a mess. Sometimes just a well
greased muffin pan works best)
