Melt-In-Your-Mouth Chicken Pot Pie  

 
Cook whole chicken & debone.  Save 2 cups of the broth.  Place chicken in bottom of 13 x 9"
baking dish.  (for quicker prep, you can use already cooked chicken & canned broth)
Add to dish (drain all liquids first) :
                                          1 can peas & pearl onions OR can use 1 can peas & carrots
                                          1 small can sliced mushrooms
                                          1 can sliced potatoes
 
Be sure to drain all liquid from cans before adding. 
Then mix:                             2 cups broth 
                                           1 can chicken mushroom soup
Pour over all.
 
Batter:
                                          1 cup self-rising flour
                                          1 stick melted butter
                                          1/2 tsp pepper
                                          1 cup buttermilk
 
Mix all together & pour evenly over top of chicken & vegetables.  Bake at 425 degrees for 25 to 30 minutes.
 
* This is delicious and as good as old-fashioned homemade pot pie. This recipe won first prize in a cooking contest!
