Louis Pappa’s Greek Potato Salad
From Sandy Ditoro’s kitchen
6 boiling potatoes
4 whole green onions, finely chopped
¼ c. fresh parsley, finely chopped
½ c. whole green onions, thinly sliced
½ c. mayonnaise
1 to 2 T. red wine vinegar
Salt to taste
Cook unpeeled potatoes in unsalted water until tender, about 20 min. Cool until you can handle them. Peel potatoes; cut into chunks in large bowl. Sprinkle with vinegar and salt; add chopped green onions, toss. In small bowl combine parsley, sliced green onions, mayonnaise and salt. Add to potatoes; mix well.

Pappa's restaurant is a famous Greek restaurant in Tarpon Springs, Fla. It is located on the Tarpon Springs sponge docks. We enjoyed eating there a couple of time when we lived in Florida. Pappa's served this salad underneath their Greek Salad. They are so delicious served together! Someday I will share their recipe for the Greek Salad too.
