Cheese & Potato Casserole for Crockpot  

 
2 lb pkg frozen hash brown potatoes  (partially thawed)
2 cans cheddar cheese soup
1 (13 oz) can evaporated milk
1 can french fried onion rings
salt/pepper
 
Combine potatoes, soup, milk, & 1/2 the can of onions.  Pour into a greased crockpot.  Add salt & pepper.  Cover & cook on LOW for 8 - 9 hours. (or on HIGH for 4 hrs)  Sprinkle rest of onions on top just before serving. 
 
* This is so easy since it cooks all day while you are working or doing something else.  And everyone will ask for seconds!
